Elevate your potato game with these Herbed Truffle, Parmesan & Black Garlic Hasselbeck Potatoes. Sliced potatoes are roasted with oil, garlic, and fresh herbs, then topped with Truffle, Parmesan & Black Garlic Seasoning for a rich, flavorful finish.
Serves: 4 people Prep Time: 15 minutes Cook Time: 45 minutes Total Time: 60 minutes

Ingredients:

  • 4 Russet potatoes (Evenly sized and uniform)
  • 4 tsp Neutral oil
  • 2 tsp Salt
  • 2 tsp Black pepper, ground
  • 4 Tbsp Butter, unsalted
  • 1 Tbsp Rosemary, finely chopped
  • 1 Tbsp Thyme, finely chopped
  • 2 tsp Garlic, minced
  • 2 tsp Truffle, Parmesan & Black Garlic Seasoning

Instructions:

  1. Preheat oven to 400°F.
  2. Slice potatoes into 1/8th inch cross-section slices. To aid in the slicing, place two wooden spoon handles or chopsticks on either side of the potato as a guide to prevent slicing all the way through. Tip: The thinner the slices, the better the end result.
  3. Thoroughly coat the potatoes inside and out with oil and season with salt and pepper.
  4. Place coated and seasoned potatoes on baking sheet and bake for 35-45 minutes, basting the top of the potatoes periodically during cooking.
  5. While the potatoes are roasting, melt butter in a small saucepan and steep the rosemary, thyme, and garlic in the butter for about 5 minutes until fragrant and the garlic is tender, then set aside.
  6. Once the potatoes are cooked, spoon some of the butter and herb garlic mixture over each potato, then finish with a sprinkle of Truffle, Parmesan & Black Garlic Seasoning.

Baked Truffle, Parmesan & Black Garlic Mac & Cheese

Indulge in the ultimate comfort food with Baked Truffle, Parmesan & Black Garlic Mac & Cheese. The creamy cheese sauce is enriched with earthy truffle, the bold flavor of black garlic, and the nuttiness of Parmesan. the result is a decadent, savory dish with layers of flavor that will leave you craving more.
Serves: 6 people Prep Time: 20 minutes Cook Time: 20 minutes Total Time: 40 minutes

Ingredients:

  • 1 lb Cavatappi pasta
  • 8 Tbsp Butter, divided
  • 2/3 C Panko breadcrumbs
  • 1/3 C Flour, all-purpose
  • 3 C Whole milk
  • 2 C Gruyere cheese
  • 1 C White cheddar cheese
  • 1/2 C Cream cheese
  • 3 Tbsp Truffle, Parmesan & Black Garlic Seasoning

Instructions:

  1. Preheat an oven to 350°
  2. In a large stock pot cook the Cavatappi pasta to al dente, 1-2 minutes less than the recommended time on the packaging. Once cooked, toss pasta with 2 Tbsp of butter until melted and evenly coated. Set aside to cool.
  3. Melt the remaining 6 Tbsp of butter in a large saucepan. Once melted, measure 2 Tbsp of the melted butter from the pan and fold it into the panko breadcrumbs. Season with salt and pepper, then set aside.
  4. With the remaining 4 Tbsp of melted butter over medium to low heat, whisk in the flour until a wet, sandy paste forms, called a roux. Cook the roux until it bubbles slightly, about 1-2 minutes. Next, to ensure a smooth sauce, slowly pour in the milk 1 cup at a time, whisking until each cup is evenly incorporated.
  5. Turn heat to low and whisk in the gruyere, cheddar, and cream cheese until all the cheese is melted. Once cheese sauce is smooth, mix in the Truffle, Parmesan & Black Garlic Seasoning. Next, fold the pasta into the cheese sauce and transfer the sauced noodles to a prepared baking dish. Top the noodles with the buttered panko breadcrumbs and bake for 20-25 minutes or until the top of the mac & cheese is golden brown.
  6. Serve with a sprinkle of Truffle, Parmesan & Black Garlic Seasoning and enjoy!
